Lightly Smoked Beef Brisket. The brisket is 12 lbs seasoned with salt, black pepper, onion powder, and garlic powder .A little extra black pepper on the fat cap witch i left untrimmed .Maybe 2 oz. of orange wood for the smoke .I cooked it for 14 hours at 185deg F then i up it to 225deg F for 2 hours and rest for 1/2 hour or more .It is very tasty .
